But one question comes up ... is it possible to record just one show? Every time I press record, the only option is to record "all" or "new" of the series.

I'm using a ROKU 4k streaming stick to access the Spectrum app. On my great room TV we can set recordings, watch recorded shows, but when on My Library and DVR, the section where future recordings should show they don't.
